Checkers embarked on a journey with Summit to train and upskill our Fresh Food Controllers and Fresh Food Managers in all our stores nationally.

We started with a pilot project in Gauteng and due to the success of this project we decided to roll out further in Eastern Cape, Western Cape, Free State and KwaZulu Natal for both Checkers and Shoprite in the Free State as well. We are confident that the training will uplift food hygiene in the kitchens, correct knife skills and reduce wastage. One of the chicken dishes used on training was implemented in a store and was sold out in one day. We are happy that Summit identified training that matches the specific needs of our staff and business goals and changed the Assistant Chef programme to suit our business requirements.

Matt Lambert

Managing Director

Matt has a passion for innovation and doing things differently, which comes from his broad experience in front line and management roles within Business Intelligence, Sales, New Business Development and Commercial Finance held within Blue chip companies. Matt has worked across 5 continents and 19 countries to launch new products, establish sales operations and lead strategic projects.

His passion for education comes from a desire to address fundamental structural issues within Africa. Matt has extensive experience within International Hotel School heading up its Durban Campus before taking over the Online business, and then moving to Operations Director, before taking over and growing IHST since the beginning of 2018.

Anthea Kallis

Compliance Manager

Training & Development has been part of Anthea’s life for the past 10 years working in hotels and related hospitality industries. From coordination of training interventions; developing and executing strategies to ensure all learning programmes are completed to collating and submitting annual Mandatory and Discretionary Grand Applications with Cathsseta.

With her expertise in submitting annual EE Reports and preparing and assisting with annual BBBEE audits, Anthea joined the IHST recently to lead a range of compliance, accreditation and new product development initiatives.

Jennifer Quinn

Manager: Training, Learning and Development - Gaming and Management Programmes

Jennifer started her career as a casino dealer in Southampton in the UK, continuing to then join Morula Casino and Hotel in the early 90’s where she was promoted and decided to stay on in South Africa. Over the years she worked her way up to become the Training Manager for Intersun Division, Sun International responsible for the training & development strategy for 18 hotels.

Jennifer also had her own training company where she specialised in management development and conducting learnerships primarily for the casino and hospitality industry.

Paula Bell

Manager: Training, Learning and Development - Hospitality Programmes

Moving from England to South Africa in the 80’s she started her career as Casino Inspector at Marula Sun and was promoted as Learning & Development Manager at Carousel and Sibaya Casino, Sun International. As Group Training & Development Manager in Maldives Crown & Champa Resorts she took responsibility of 7 CCR Resorts and over 3000 employees.

Paula joined the IHST team in 2017 while also publishing her book Past Lessons – Future Gains.

Sue Daya

Manager: Special Projects

Sue comes with a vast background in the Food Services and Hospitality environment. From running her own business to Facilitation in Hospitality, Tourism, Generic Management, Health & Safety, Domestic Training and Life Skills. With her experience in Training Customer excellence programmes for H&W Seta at Intercare Hospitals and Government Departments she joined the then Uniskills in 2015 who then became International Hotel School Training.

To date she has successfully coordinated special projects for our Checkers, Sun International and Mauritius training interventions.
